Quickie Dinners

Do you and your family have some easy, fast quickie dinners that you resort to when things get a little hectic?

We do, but I find that they are usually egg dinners, and I really don't like eating eggs all that often for healthy reasons.

Since my mother is less than a week out of the hospital and my dad just finished radiation treatment; I stop by and spend at least an hour every night after work with them.  So by the time I get home, I'm looking for something quick and easy.  I use my crockpot a lot, but sometimes you just want to do something different!

Then there's the good old breakfast for dinner, which I find easy and quick, but once again it involves eggs.

I also found a recipe for baked eggs, which is awesome even if it doesn't sound that great, it tastes great!  Here's the link for that one:  Click here!

Hi Laurie...
I thought I would share this recipe I learned in my tech school cooking class...I have used it for 30 yrs for a quick dinner (although it takes about 50 min to bake) it is quick to through together...it is a version of Chicken cordon bleu.

Place a slice of ham and a slice of swiss cheese on a chicken breast. Roll up and secure with toothpicks. Dip in melted butter and then roll in bread crumbs. Place in 13X9 pan sprayed with cooking spray. Bake 30 minutes .... mix one can of Campbells golden mushroom soup with one soup can of water..turn chicken rolls over and pour sauce over top..bake an additional 20-30 minutes...you have a great meal...use the sauce over the chicken as well as rice or noodles. So simple..yet it tastes elegant!

Mmm, Jackie's recipe sounds good to me. I might need to try that with a few changes to make it lower in carbs.

Laurie, I'm glad you like that crustless quiche. We do, too. One of our favorite quickies is baked fish with a salad and a vegetable like broccoli or green beans. Even if the fillets are frozen, they thaw in warm water in just a few minutes and they take about 10 minutes to bake!

Put some butter in a small bowl and if it isn't soft, melt it a little. Add garlic powder, freshly ground pepper, and any other spices you like and brush this on both sides of the fish. Put the fish in the oven at about 325 and make your sides. When the fish flakes easily, it's ready. Voila, a healthy and tasty dinner in less than 20 minutes! For those carb lovers, throw in some rolls or bread and butter and enjoy.

I have a ton of quick meals!

Denise, thanks for the fish recipe. I have some frozen fillets in the freezer. I'll need to dig them out and try this. Sound great!
